Chocolate Chip Cookies
The only recipe you will EVER need!
Ingredients:
1 cup oil
1 cup brown sugar
1/2 cup white sugar
1 tspn vanilla sugar / extract
2 eggs
3 cups plain flour
3 tspn baking powder
pinch salt
1 cup 60% cacoa solids real chocolate chips

Instructions:
1. Preheat your oven to 350°F (180°C). Line 2 baking sheets with parchment paper.
2. In a large mixing bowl, cream together the oil, sugars and vanilla.
3. Beat in the eggs very well so looks light and creamy.
4. Add in the flour, baking powder and salt. Stir slowly at first to avoid flour going everywhere!
5. When the mixture is starting to come together, fold in the chocolate chips until evenly distributed throughout the dough.
6. Using a 4cm scoop, scoop the dough onto the prepared baking sheet. you can half these to make the perfect size cookies.
Leave some space between each cookie for spreading.
7. Bake in the preheated oven for 10 - 12 minutes, or until the edges are lightly golden brown.
8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
9. They freeze really well. Enjoy your yummy chocolate chip cookies straight from the oven (once cooled enough), from the freezer or however you like them!
Tips and Variations:
- You can fill with any additions you like such as adding chopped nuts, glace cherries, leftover cereals, shredded coconut etc.
- For extra soft centered cookies, bake them for 2 minutes less and press down on each cookie straight out the oven so they sink a bit.
- Store leftover cookies in an airtight container at room temperature for up to 1 week, or freeze them for longer storage.
