Shavuos Meringue Cake

The recipe that everyone loves in place of cheese cake! Verified by friendly tasters over the years.


You love cheesecake, everyone else doesn't, you don't like cheesecake, you want other options, the more cake the merrier, whatever the reason, this is your cake! Take the fact you are reading this, a sign to make this cake NOW!

Can be made Parev or Milky, various topping choices.

Years ago I wanted to make a show stopping dessert that had a mixture of yumminess and impressiveness whilst not looking too untouchable. This fit the bill and may I say didn't last very long!


Try it and let me know how it went down...


Ingredients:

4 eggs separated

1 ¼ cup caster sugar

½ tspn corn flour

½ cup softened margarine or butter

1 cup plain flour

1 tspn baking powder

¼ cup water or orange juice

2 tspn lemon rind

1 Tbspn lemon juice


Strawberries to decorate or other topping of choice.

I small parev whip or 250 ml whipping cream.

3 Tablespoon icing sugar


Preheat oven to 180ºC / 350ºF. 

Line two 8 inch round tins with baking paper.


Beat egg whites on low speed for two minutes till light and foamy. Increase the speed to the highest and beat for 5 minutes till soft peaks start to form. Add in 3/4 cup of the sugar 1 Tbsp. at a time until all ¾ cup of the sugar has been added. Mix in the corn flour.

The whites should be stiff and glossy. Set this aside.


Beat together the margarine or butter and the rest of the sugar on a medium speed until light and fluffy.

Add egg yolks one at a time and beat very well till combined.

Fold the flour and baking powder into the mixture alternately with the water or juice making sure they are mixed in well. Mix in the lemon rind and juice.


Divide the cake batter between the 2 tins and level the tops.

Carefully spread the meringue mixture (which was set aside) over the cake batter in each tin.

Shape the top of one meringue into swirls. Leave the other with a smooth finish.


Bake for 25 minutes. Take the cakes out and leave to cool.


Putting them together...

Beat the whip or cream up into stiff peaks. Stir in the icing sugar and set aside until ready to use.


When the cakes are cool, spread a medium layer of whip or cream onto the cake with a smooth finish. Lay some strawberry slices on the cake. Place the second cake layer on top. Spread with a thin layer of whip. Lay strawberry slices on this cake in a nice pattern and serve.

I wouldn't look at the nutritional info if I were you... the Strawberries swallow up all the calories! :)
